That is a small king all, small ones have yellow spots.
You can tell it’s a king by the dip in the lateral line, and the gold chain on the perspon holding it, both are dead giveaways.

I was hoping that would be noticed. The chain thing, that is. I could care less about distinguishing mackeral species. They all taste like crap.

What happened to the picture…I was going to show it to all of my Greek friends, the guy looks just like them…chain and all. Small or large a king is a king.

If you don’t like king mack, then try the following just to see what you think about it. Pier 61 (I think that was the name) used to serve it for lunch. It was very good and I copied their technique (they freely told me). First, filet the fish. Then, cut the skinned filet into about 6 or 7-inch steaks (long ways), and split each steak down the middle (where the spine was, and where the natural groove is between the two main muscles), forming two tube-like sections of meat. Put two of them in a deep dish and cover it with creamy Italian and zesty Italian dressings, 50/50 (use a lot, so the fish is actually floating in it, and dunk the meat under it) and cook this concoction just as it is. I think I used the bake setting at 385 deg. It is very good that way. I don’t like it any other way, though. I don’t target them, but we catch a couple here and there around the ledge in the summer. We used to king fish a lot when I was younger. As for the mercury thing, I looked up some info on it, and just about all of the offshore fast fish are loaded with it, including tuna, even though the tuna we catch are only 1-3 years old. I was surprised to find that even atlantic salmon is on the list. Where’s the picture about which everyone is debating between ling and spanish.
