I like my Beef, on the rare side of medium!
Yes; any steak cooked more than medium…should just order hamburger instead.
If you’re lucky enough to be fishing, you’re lucky enough.
What about venison? I heard you really needed to cook wild game all through because of toxoplasmosis.

Negative! Since wild game (venison) is considerably leaner than beef, medium rare is the desired temp. Anything much more than that and it dries out quickly because of the lack of fat.
No matter how much it hurts, how dark it gets, or how far you fall…you are never out of the fight.
I also heard that freezing below a certain temp for a certain period of time will kill the parasite so you can enjoy it properly rare.

I’ve been eating deer and all sorts of wild game all of my life but it hasn’t been until recent years that you start hearing about all of these parasites and other microscopic nasties. Probably has something to do with today’s over-medicated germaphobe weakened immune system society we live in now.
How you handle wild game after the kill is as important (more important, in my opinion) as how it’s prepared.
No matter how much it hurts, how dark it gets, or how far you fall…you are never out of the fight.
It’s either hilarious or sad how the over-protective germophobes think that everything has to be sanitized…meanwhile almost every toddler on the planet picks up a chunk of apple or carrot off the floor when mommy isn’t looking and sticks it straight in their mouth. And somehow they survive.
If you’re lucky enough to be fishing, you’re lucky enough.
Sear the outside and leave it raw, barely warm, on the inside. Perfect for a thick ribeye!
Ask Howie Mandel how germophobia is working out for his immune system…

FYI, in restaurants when someone orders a well done steak the cooks grab the worst steak they have ,not out of spite, but because they figure its ruined anyway.
I’m a rare steak person. I believe that to truly get a real beef taste, it must be rare or medium rare at most. A few years ago, my wife and I went to Las Vegas with my sister and her husband. We went to eat at Vic & Anthony’s for dinner one night. My brother-in-law orders the filet and wants it WELL done and I do mean WELL, to the point of almost being burnt. He then asks for ketchup to eat it with. They bring him a bottle of ketchup in a wine cooler stand and set it beside his chair. True story.
That’s the only way he will eat any steak, burnt with ketchup, and believe me, I have tried and tried and tried to get him to change. He refuses to.

Sear the meat, let it rest. That is all.
Venison back strap, my butt didn’t itch.
Waaaaaay long time ago when I worked as a waiter, a customer ordered his teriyaki steak well done.
I was in the kitchen when the man’s waiter brought the steak back to the cook - he said it wasn’t done enough. The cook put the steak back on the broiler and lifted the grill to the top notch and recooked the steak until it was smoking. She re-plattered the now shoe leather steak and sent it back to the customer.
A few minutes later, the waiter returned…still not done enough. The cook was livid. She threw the steak on the floor, stomped it with her foot a few times, picked it off the floor, washed it off real good - twice even, then put it back in the teriyaki sauce and scorched it some more.
The waiter returned and said the customer said it was the best steak he’d ever had. The cooks eyes almost popped out of her head as she confessed she thought he was going to reject it again.
Y’all be careful sending your foot back to the cook more than once.

I prefer my steaks rare, a good char on the outside & still mooing on the inside. When I started dating my wife, she wanted them well done(dead). And she wouldn’t touch anything with a bone in it. Boneless steak, chicken, pork, or whatever was all she would eat. After a few times of “accidentally” under cooking her steak, she came to realize that a little rarer is good. Now she likes a good medium rare. But she still puts ketchup on everything beef & pork! It almost makes me sick when I make a nice pot roast with gravy or a filet on the grill, and she smothers it in ketchup.
