We make ours in big batches so I’m not sure of the exact amounts for a small serving but I can get you close:
1/2 pound Mild Cheddar
1/4 pound sharp Cheddar
1/8 shredded Parmasean (optional)
1 tsp. coarse black pepper
1/2 small jar of pimentos
1 cup Dukes mayo (more if you like it creamier)
1 tsp. minced garlic
1 tsp. texas pete
1 tsp of parsley for color (optional)
This is close to what we use at our store, give or take a little. I make mine by site, never been good about measuring. Let me know what you think.
I always eyeball everything, but I think this will work for you.
1/2 Extra Sharp Cheddar Cheese (I alwasy use more…)
Large jar of Pimentos
1 pkg Cream Cheese-allow it to get soft as whipped margerine
1 tbsp Mayo
1 jalapeno pepper
texas pete, paprika, salt & pepper to your taste
Just eyeball it when you mix the first three ingredients until it suits you. Then add the rest to taste. Some like it hot.
The more we just complain…the more things stay the same.
hoppy; my bride,son ,his bride and mom went to hh island for the week. she left me a big ol container of homemade pimento cheese. she is due home this evening. i will ask her for the recipe. i do know this.; it was ■■■■ good. maybe she can hook you up . all of those on here sound pretty good also.

And yes, Palmetto Cheese is the heat, especially the one with jalapenos.
Stella has a good recipe from my Mom. It’s real simple the stuuf that goes in it is easy to pronounce. Slap some on a chargrilled burger the next time you are grilling burgers.

I like my pimento cheese very simple and a little on the drier side.
My mom makes what she calls “adults only pimento cheese” it’s spicier and me and my cousins hated it when we were kids hence the name. I don’t know the exact amounts as I never really follow recipes but here it is:
1 stick (8oz?) Extra Sharp Cheddar
1 stick (80z?) White Horseradish Cheddar (made by Cabots I believe)
1 jar pimentos with about half of “the juice”
1 clove garlic finely chopped
Mayo to the consistency you like
Salt and Pepper (fresh ground of course)
sounds like it would just be easier to set up a paypal account and pay y’all to try them all!!

add a little vinegar to ur favorite recipe.
JMH is on the money. Use the brown too. The white vinager is for feminine hygene.
