Tried something different last week that turned out better than expected. We have caught some over 1 pound pompano off the pier and I only headed and gutted them in anticpation of baking them in the oven. Last week I decided to make pompano patties - sort of like crab cakes / salmon patties.
First, get a good sized pompano out of the freezer.
I boiled the fish first and then picked it.
Meat:
Bones, skin, and junk:
Mixed all of the good meat with bread crumbs, 1 egg, 1/2 medium onion and a little Old Bay. No picture of the mixture, so just use your imagination.
Pattied up into 4 patties and browned up in some butter.
They turned out much better that I imagined. My husband thought they were fantastic. Good thing we have more of those guys in the freezer.
Cherry Grove. We actually have caught most of the big ones while jigging for blues and spanish. The seem to get mesmerized by the gold hooks in the mackeral trees.
