never caught one yet, but i keep hearing how good of eating they are and found them in a fish market and want to try one sometime. i like the idea of fish patties as someone mentioned but whats the best ways to make em?
i prefer them baked or broiled whole. spice,herbs and butter of your choice. pompano also have a good amount of meat above their head. Deff one of my fav to eat

Not sure who posted the pompano patty post, but I do remember they used frozen fish. I remember thinking it looked like a very good application for many frozen fish.
I have cooked a good bit of pompano and agree with heartofthesun. Baked or broiled whole fresh pompano is the business. Skin on, salt and pepper. Also good on grill but be careful removing from the grill. Once cooked pinch the tail meat and lift towards the head. Filet comes off easy with no bones. Flip and repeat.

Oh yeah. Pompano filet grilled, on a hot grill, skin side down is the way to go with the larger pompano.
