The good thing is, they basically have built in tidal rails. Not sure what it would take to crack one in half. That being said, I did dive on a pontoon boat wreck in the keys. Not sure what caused it to sink, or what was required to sink it, but likely deliberate.
I would think that even if it cracked in half that the pontoons would still float and you would still have something to grab on to.
Sure, we all know you don’t want to be in a 3+ foot chop in those things, but is that dangerous or just uncomfortable?
Its just as big as that boat beside it, and its made out of metal too.

It’s not the concern of sinking but more so the supports and braces connecting the pontoons together that will bend, warp, crack, and break rendering the boat unusable (not necessarily sunk). They are not made (designed) for rough water and therefore it would be a significant risk to take that boat 60 miles offshore. I’m not concerned for their personal well being if they choose to make that decision but I would be concerned for the ones who have to go rescue them if something were to go wrong.

Also, maybe I have the physics backwards here, but wouldn’t pounding through a 2-3 wake on a freshwater lake be more stress than a 2-3 wave in the salt since the boat would be more bouyant in saltwater?

I’m pretty sure your physics is backwards. As you pointed out, since salt water is more dense and more buoyant, the Deceleration force from a boat plopping down into salt water would be a greater force been plopping down in the freshwater because the deceleration time would be less in salt waterr. Greater force would be greater strain on the construction
I was camping at capers a few years back…had a group of guys come up in a pontoon to camp a few days later on a super windy day, was chatting with them for a bit…captain asked me, “how far you think I can take this boat offshore?”, I said, “surprised you even made it here”…I was halfway joking but he was fullway offended…no more words were exchanged.
