pot roast chicken

You need:

1 chicken (about 3#s)
1 onion
4 stalks celery
5 carrots
6 cloves garlic
4 cups chicken stock
1/4 cup flour
1 bunch thyme
salt and pepper

Cut chicken into peices then season.

Dice onion, celery and carrot. Then peel carrots.

Brown chicken in butter over medium heat.

Remove chicken from pan and add onion, celery and garlic.

Add flour and mix well.

Add stock a little at a time until a nice gravy is made.

Put chicken and thyme into gravy and top with carrots.

Cover pot and put into 325 degree oven for about 2 and a half hours. Remove chicken and carrots and serve gravy over rice or potatoes.

I do it the lazyman’s way! Do all of the above except, when you get to the oven part, put it in a crock pot, set on low and go do something for 8 hours.

Thanks pen. Easy, crock pot works well too. Either way it makes the whole house smell great.
