Anyone have advice on the best way to preserve shrimp for a few days that will eventually end up in the fryer?
I think shrimp po boys might be on the menu Sunday night but I might have to catch them Friday or Saturday.

Vacuum pack or freeze in water
If you catch them Saturday do you really need to do anything other than pop some heads and store it in the fridge till Sunday? I wouldn’t think so?

That’s about all they need. I would just put them in a bowl of ice in the refrigerator. No need to freeze them for a day, no need to vacuum bag for a day. If more than a day or so cover them with water and freeze.

For 2 or 3 days? Vacuum sealing is definitely overkill. As has been stated, store in a bowl of water with ice in the refrigerator. Any idea how long “fresh” shrimp is left refrigerated between the boat and the time you buy it? At least 3 days for sure.

Look into Alton Brown’s frig rig for seafood. One plastic dish with holes in it full of ice to hold the seafood and a second under it to catch the melting water. Fresh shrimp should stay good for 3-4 days like this provided you keep the ice topped up.
I’ve put them in a zip lock in a shallow bowl of ice. They hit the hot oil tomorrow about 6 PM.
