I read an article this past month by Sam Crutchfield in Fort Pierce, Florida with a great article on King Mackeral recipes. He started by seasoning a filet, and adding onions and bannana peppers and wrapping in tin foil. Bake the foil with the filets and vegetables at 400 for 25 minutes. In the meantime make a pot of rice and fresh tomatoes. Take the fish out and place on a paper plate with the rice. Throw all of the contents on the plate into the trash can and go buy a decent meal from a restaurant!

King Macks are excellent table fare if you can catch the “snakes” and fry them fresh. They eat better than a mahi mahi fish or a wahoo. Maybe you should join someone in your hometown on a trip in a small cc and go enjoy how fun these mossbacks can be. Maybe you could charter the TOP GUN, I hear he is one of the best around your parts. Also, while king fishing you may catch a beast of a fighter called an Amberjack. If you are experienced with cleaning these awesome specimans they eat like Grouper! Good luck and plese let us know what you think of the fish fresh.

I will agree with you on the AJ’s, Capt Mark Brown “made” us keep some back in the early 90’s and we thought he fell off the boat and hit his head. I was very surprised and they are very good.

Kings, IHMO, do not compare with wahoo or mahi but they are not bad. The recipe I have tried and is not too bad is Poor Mans Lobster.

Get a strong crab boil going with Ole Bay

Cut the king filets into chunks

Drop them into the boil for a few minutes and then scoop them out and dip in melted butter.

I wouldnt go so far as to say Kings are as good as Mahi; however, when properly prepared they are very good.

Our most common prep method is to put them in tin foil with a little butter and some vidalia onions on top. Avg size is usually done in about 10-12 mins at 350. Do not over cook.

Comparing Kings to Mahi Mahi and Wahoo is like comparing Hotdogs to Steaks. I was told try them smoked, and I tell you what the best way to eat Kings is to Smoke and make into a fish dip.

Tprice - Tried your recipe tonight with a pack of king filets that we had vacuum sealed in the freezer. Both my husband and I were REALLY impressed with how good this is. It takes some of that strong flavor away and you end up with a softer flavored fish if that makes any sense.

Will definately prepare king again this way.

fresh grilled king with lots of lemon and pepper is pretty (**() good.

i also like to make a marinade with soy, olive oil, lemon juice, a healthy amount of garlic and ginger, hot sauce, salt & pepper

that marinade is off the chain… great for tuna as well

I had never tried it, we always released the kings but I do like fishing for them since they are easily within reach for my boat. I had been given this recipe several years ago and finally kept a couple to try it with and have to admit I was surprised.

My sis in law who does not each much fish at all loved it

My understanding is you need to try fresh kings, I have never frozen kings but have been told they do not taste as well

I am wanting to put some on my smoker and try that so looks like I will freeze some and bring them home to smoke this summer

I have posted before that my husband and I are total goats!

We got the kings iced down quick upon catching, kept them cold and immediately vacuum sealed and frozen after getting home.
