We’ll call it that because thats what I basically did…opened the refrigerator and put whatever I saw in it…
2 1/2 lbs lean ground beef
1/2 jar mild salsa
fresh spinach
chopped onion and a small amount of chopped peppers
2 eggs beaten
some crumbled fresco Mexican crumbling cheese
some peeled and cubed potatoes
A bag of N.Y.texas toast chipotle cheddar flavored tortilla chips
mixed all together in a large bowl then placed in a pan, baked at 350 for 40 minutes, then put a little tomato paste mixed with tomato soup
on top and baked another 15 minutes.
Served with some sauteed peas/mushrooms and steamed fresh corn
It was really good for a thrown together meatloaf of sorts…and donnie liked the 'taters cooked inside of it…me I hit it with a extra shot of sirachi hot sauce
on this one…the pics dont do it justice…donnie named it mexican feast meatloaf:smiley:
BTW…bilo has some of the sweetest corn Ive ever had right now…
