Flying…Livingstons and Carolina put up thousands of pounds of “Carolina Gold” for local sale. shrimp from the Ville sell under the market names of Bulls Bay or Carolina Gold. I sell G-town shrimp packed under the name Capt. Carson Shrimp.

Sells- I had just not heard of them freezing with the heads on. I thought he was referring to fresh caught year round.

Fat Hen out on Maybank HWY on Johns Island uses only local and seasonal ingredients. Quite good too.

What brand and style of knife are you using to fillet your fish? I been looking for a high quality commercial grade fillet knife and I am not sure where to find one.

Sells / Parrothead - Can either of you explain exactly what a “Fish Collar” is? I’ve seen it on a few menus, but don’t have a good concept of it. When I filet a fish, I am getting the shoulder, but am I missing something else?

Great thread by the way, I’ve learned a lot and verified a few things I knew, like skinning a dolphin is a bad thing to do.

No…those are Maui wowies, corey’s, Mahi…and any other name they can put on a dolphin.

Carolina Gold is a premium frozen shrimp from the ville.

these are collars from a Japanese Yellowtail aka “Himachi”

you can get great collars off of almost all large fish. The collars off of a Swordfish can be split and then they french the bone to produce a sword “chop”. A very premium product as there are only two per fish.

Ok to skin a dolphin, but when you cut up the steaks/chunks the red meat still needs to be removed…and the silvery stuff on top of it comes off with it. I don’t like it when the red meat is left. I observed mahi at a restaurant with the red & silver stuff in it. BLAH:dizzy_face:

It ain’t no mystery…this beer’s history!

I had some BSB collars awhile back at the grocery downtown that were awesome. A little tedious to eat being a small fish, but man they were good.

The only local item at that house of swill is the cluster oysters they get from Mangione in Beafort. They pass off Basa / Panga as “Island fish” and tell people it is groupers cousin. Their grouper and mahi are frozen imports all of thier crabmeat is import.

Some of those places listed made me laugh!

Places that I know use local / domestic and observe truth in menu

Husk, Glass Onion, Fleet Landing, Amen Street, Lucca, Red Drum,FIG, Carters Kitchen, SNOB, Langdons, Mcrady’s, Cypress, Hanks, Blossom, Magnolias, Tristan, Ansons, Saltus Grill (Beaufort). Peninsula Grill, Charleston place, Bambu…there are plenty more, just ask questions!

sell you might want to be careful slamming them like that, although they do serve some non-local like the Vietnamese fish (Panga) many like but they do serve a LOT of local seafood too

my uncle, Capt. Sonny White sold them fresh local right out of the stono river crabs, oysters and clams for many years… and they bought shrimp n fish right off of some of our local docks

Gilligans used to sell nothing but local until a few years ago, now they mix it up some but still sell a lot of lo

If you simply filet a dolphin when you are ready to eat it , just cut the skin off with your filet knife. Leave about 1/32…that will leave the white stringy stuff on the skin. Grill the mo fo, and eat around the red stuff.

MEKS…Done my homework,and yes they served almost all local when the opened, but since corporate took over, they have gone to profit over quality. Show me one FISH that is local on the menu. They are not alone, but with new “truth in menu” legislation there will be change! Next you will be telling me that Hymans serves all local fish…

when they first opened, and for many years after, ALL the seafood was local… people actually asked for more so they branched out to things that aren’t local too

and no I won’t be telling you a thing about hymans, never even been there so I know zero about them… lol

but I will be coming to visit your place soon, you seem to know your stuff for the most part… so I would trust you and your food to be as you said it is… where are u again?
