I get nothing but negative remarks about the ringtails that I bring home when out fishing so I figured I would finally cook one and see for myself what all the fuss is about. I got good remarks back from a guy I work with so I’m having fish tonight. The fish was cleaned yesterday and kept in the refrigerator over night. I skinned it this morning, coated with oil, salt, and pepper and thrown in a Nuwave Infrared oven for 20 minutes. All I can say is you can throw them back all day and I will fill my coolers slap full any day. The fish was delicious, tasted like any whiting fillet you can get at a fish market or restaurant. Not sure if anyone else has tried them and was afraid to speak up because of all the other remarks from respected captains or experienced fisherman but they will definitely be going in my freezer when they are caught. Its not the catch, its the cook.

Thanks for info. I’ll take one for a ride in the cooler next time. If it tastes good, eat it!

Alright will do big jigger. I just got a new map today and gonna try some new spots but I usually have an extra spot on board. The more people on board, the more fish you can keep

You figured you would finally cook one? You have been posting photos of them as part of your catch for some time, I was thinking you have been eating them all along. What have you done with all the other ringtail porgies? In my experience, they taste just fine but they are full of bones and the resulting filet is tiny (low yield), not worth the effort to clean.
It has been interesting watching your catch change (better quality fish) with your trips as you gain more experience/time on the water. Just make sure you eat what you keep, otherwise let it go.
I eat everything I catch but I let fish stock pile up until I get enough to feed lots of people

Ringtails are good panfish, member of the porgy family.

McDonalds has fish sandwiches. I don’t eat those either, but I am sure with enough tartar sauce, people must like them. No thanks. I’ll stick to the filet mignon of the sea.
My son works in Dutch Harbor Alaska for the power company that sells power to the fish houses. After telling me what they do with all the fish parts I don?t think I will ever eat another fish sandwich again.
A wise man once said “Do as I say not as I do” Good advice when I tell you that.

I love how some people pile on cole slaw salad for everything thinking it'll add to the taste. I hate it.

I'm with you on that. Coleslaw is like shredded plastic with mayonnaise on it. It seemed to be the default topping for NC "barbecue". I put that in quotes, because, as you mention, anything that you need to add "slaw" to to add to the "flavor" probably didn't taste that great to being with!!! I bet ringtails would be better with slaw piled on top...
