Roasted Chicken And Bow Tie Salad

3 cups bow tie pasta cooked

2 cups/(aprox.2 breasts) roasted chicken breast /diced (can use packaged-precooked and diced from meat department)

1/3 cup fresh orange juice
1/4 cup fresh lemon juice
2 tablespoons extra virgin olive oil
1 tablespoon stone ground mustard
2 teaspoons sugar
1 1/4teaspoons salt
1/2 teaspoon fresh ground black pepper
1& 1/2 teaspoon rice vinegar
1 cup thinly sliced and diagonally cut celery
1/3 cup finely chopped red onion
1&1/2 cups purple/red grapes sliced diagonally
1/2 cupchopped walnuts/toasted
3 tablespoons chopped parsley and chives

pour 1st 8 ingredients in bowl and whisk together until thoroughly blended.

add remaining ingredients and gently toss.

Looks great as usual.

Tried Penny’s recipe for dinner last night with two leftover grilled chicken breasts, and it was fabulous! Used tri color rotini pasta which made for a really pretty dish.:wink: Thanks, Penny! A
