SALAD

Let’s be honest bbq is heavy. One of the things I like to do to counter that is serve a fresh vegetable salad. The vinegar in the salad cuts right through the fat and helps balance out the rich smoked meat. I’ve seen Easy post something similar to this and thought hey, I do the same thing. People love it, and it often ends up trumping the meat. It is great with grilled meat, or put under fresh fish on a hot summers day. The juice runs on the plate and acts as a sauce and with a cold beer on a hot day, it’s tough to beat. It’s also done ahead and allows you to get back to enjoying yourself. I put fresh cooked corn, cucumbers, tri-color peppers, red onion, grape tomatoes, chick peas, vibrant fresh dill and chunks of salty feta. Then hit the salad with salt, ground pepper. Once put together simply dress with cider vinegar, good olive oil and a few spoons of sugar, a little red pepper flakes for some heat if you like. Chill and it’s ready to go, just taste and adjust to your liking. Hickory smoked St. Louis ribs, juicy pulled pork and fresh vegetable salad. Make your friends bring the rest, no need for them not to contribute:smiley:
