Had some fresh salmon left over so used the following recipe to make some patties for sandwichs…forgot to get buns so had to use french bread. Was really good .Much better and less fishy tasting then the canned stuff.
what I used
salmon…chopped fine into small pieces(could use a blender to do this)
sliced scallions(I used four for the amount of fish I had)
3 large eggs
kosher salt and fresh ground pepper
1/2 cup bread crumbs 1/2 cup panko(set aside 1/4 cup of the panko to “pat” the patties with). could use just bread crumbs
about…4 tablespoons smoked horseradish sauce
mix all well together in large bowl…pat with additional panko or bread crumbs…fry in a small amount of olive oil.
