How do you tell the sex of sailfish, marlin, etc?

The bigger they are the more likely they are to be females. Not necessarily desirable in the human world but that is true for many fishes as it results in increased reproductive capacity and thus a better numerical chance for larval survival.
I can usually tell when I’m portioning them up for the smoker. Females have eggs (which are good wrapped in bacon and fried) males have long white sacks. Other than that…I have no idea on a live fish.
If you’re not effecting the world around you in a positive manner…you’re taking up too much space.
Males rarely exceed 300lbs-

What about the ones that have the white spot on top of the head. Heard the’re males that got it by rubbing up against females. See it once in about every 15 fish.
