shad roe?

well i finally kept a couple roe shad and took the eggs out of em to see what they actually taste like. didnt have a whole lot of time but took 1 of em and elarned very quickly NOT to deep fry them lol. breaded another and pan fried and tasted fine. i though i heard others say poach and sautee with onions and serve in an omelette or in grits? got the other 2 in salt water im gonna eat for supper tonight…any suggestions appreciated.

My dad always scrambled them with eggs (chicken eggs). I never cared much for it, myself.

I did the deep fry thing about 20 years ago on some. Live and learn, but would have been glad to tell you not to do it if you’d asked!

My neighbors wrap them in bacon and put on the grill. I’m like cracker, I don’t care for them either. The Bucks make good catfish bait.

Edit, When my neighbor lands them he cuts them below the gills and bleeds. He says if you don’t the roe doesn’t taste as good. ?

For the roe saute some peppered bacon,onions,bellpepper,then add roe when almost done ,scramble in a couple eggs and season with a little salt and pepper to taste. For the bucks you can slice thin an fry. Also a fellow told me he uses them to make fish cakes. Also they do make good bait.

bacon is always a winner in my books! wrapped the 2 remaining roe sacs in a slice and frying now

Got to this one for you. My neighbor calls the bucks Saturday fish. He loves them, but said it takes all Saturday to eat them after picking out the bones.

My Dad would bake them in the oven for hours, until the bones were soft enough to eat. Not my thing, either :smiley:

My grandparents use to have to have at least one every spring. It was like a ritual for them. I never was impressed by it - too boney. The roe now I liked scrambled in eggs and served with some grits. They kick off the fishing season in the lowcountry. Shad first - then crappie, then shellcrackers, and then the redbreast.

Shad roe are delicious.Poor mans caviar:smiley: I like to batter them the same way I do fish and lightly deep fry. I just keep them covered until done. Does not take long. They are good in scrambled eggs too as mentioned.

pan fried they werent too bad…however im sure if someone who knew what they were doin cooked em and i ate em theyd be a lot better. the scrambled eggs with some onion and mushroom does sound good though if i keep another roe i might go that route next time. as for cutting the gills i did that with walleye back home and yes it cleans the meat out and makes it better and less of a mess at the cleaning table…ill probably do that if i get another roe to keep.

did some last night, bacon will make anything taste good. I was the only one to eat them, Wife and daughter spit their’s out. They are texture eaters and said it was gross.

Clean them then fry them until they are almost black. Eat bones and all. Very good.

Grind 'em into chum, chum up better tasting fish!!:imp::smiley:

tried the roe exactly as fred had pictured and wasnt too bad and your wife is braver than mine…mine wouldnt even look at it when i made it! havent tried the shad meat but tigerfin thats great! catfish, crab, and shark otta eat a chunk of shad and all of those are good eating for sure :wink:

well i just took the tigerfin advice and turned a chunk of shad into a 7lb blue cat which i filleted and cooked a piece breaded with corn meal and ghost pepper rub…YUM!!!

Bet it tasted way better than shad roe too!! You’re welcome.:wink:

Wrap shad roe in bacon and pan fry. Save the fish for bait/chum.
