shad roe

made my yearly trip to santee cooper for some shad fishing and had a very good day while i was there and limited out at arrowhead. with said good day, 8 of my shad were roe shad and i have plenty to experiment with. on a not so banner day on the same trip my buddy and i tried some mixed in with scrambled eggs and topped with sauteed onion, green onion, mushroom, bacon, and cheese. that idea tasted pretty good. ive also tried them cooked plain with bacon grease and turned out decent as well. anybody else have any other suggestions?

I’ve deep fried them before and also wrapped in bacon over an open fire but we usually scramble with chicken eggs and onions.The first way you described sounds great.Good job on a successful day.Were there many trailers in the parking lot?

i actually parked in the dirt lot right near the railroad trestle and drug a kayak over the dirt hill. the next idea i have in mind is to honor southern cooking and serve them over grits :smiley: going for shrimp and grits style with cheese sauce, smoked sausage, onions, mushrooms, … but of course open to any suggestions. the smoker is also another thing im considering.

question #2: how well does shad roe freeze?

Yes,roe goes well with grits,but doesn’t everything.Never had any frozen.Let us know how the smoked roe turns out.

never have been a picky eater so i may not be the best one to follow if i say it tastes good :smiley: if i DONT like it on the other hand…should probably steer clear of that idea! smoker i plan on putting roe over pieces of bacon or something so half of it doesnt stick to foil or what not.

I deep fried some Dolphin roe once… That is a set up for grease explosion. :smiley:

bwahahaha nicely done fred. i learned not to do that with one of my 1st roe shad back in 2013. that mission got aborted in a very short amount of time.

update: breaded with flour and homemade cajun spice skillet fried in bacon grease served over yellow grits and green onions worked out really well.
