Shark Steaks...Best Recipe?

Looking for a good recipe for shark steaks. I have tried a few different marinades, grilled and baked em’. Some of these turned out pretty good, but…still looking for the best recipe.

Make shark McNuggets out of them. Soak in buttermilk and fry at 375.

If your getting the shark yourself go ahead and gut and rinse it in the water before you put it in the cooler. Have to leave the head on to bring it to the landing. They get a rank taste if they die before you bleed them.

emeril’s fish rub with olive oil on the grill, or emeril’s fish rub with favorite breader and deep fried.

Only found emeril’s fish rub at Publix.

I do catch my own sharks and I didn’t read the regs before bringing in my first couple. I did know they needed to be bled after catching (learned that one when I had caught some as a teenager). I didn’t bleed them, and yes they are pretty rank if you don’t. Of course I read the regs after that 1st batch and said oops! Thank goodness I didn’t get checked. I’ve left the heads “naturally attached” since. What’s up with that anyway…are there people out there that have tried to sew on a different head on the shark they caught or what!!

This is what I use:

Grilled Shark

Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients:
• 6 shark steaks
• 1/2 cup soy sauce
• 1/4 cup ketchup
• 1/2 cup orange juice
• 1/4 cup chopped fresh parsley
• 2 tablespoon lemon juice
• 2 cloves garlic, minced
• 1/3 tablespoon ground pepper
• ¼ cup olive oil
Preparation:
Combine soy sauce, orange juice, ketchup, chopped parsley, lemon juice, pepper, olive oil, and minced garlic. Place fish in a shallow baking dish and pour marinade over them. Cover and marinate in refrigerator for 2 hours. Remove fish from marinade. Grill fish over hot coals 6 minutes on each side or until fish flakes easily when tested with a fork.

For simplicity, and depending on how effectively it was bled and iced upon capture, i like to soak in buttermilk for up to a day (at least 6-8 hours) and then transfer to italian dressing for another 6-24 hours. grill and serve with a caprese salad just like Long Enuff. i fillet them now… mostly because i learned an easy way to clean them and cutting steaks dulls knives quickly!

many species have a zero limit, and many sharks are really hard to identify- both for the angler straight out of the water, and for a law enforcement officer if the head and tail are removed. with a serrated knife, cut from the throat through the neck and leave a bit of skin on top. same for tail, bleed for 10 mins, rinse and ice heavily.

Sharks dont pee right, i think its in their blood so you have to bleed them to get the urine out of their systems. I usually cut the tail off and like someone else already said, soak in milk and lemon juice and make shark nuggets out of them. I have made shark steaks and grilled it, just dont overcook it and season with salt and pepper. Fresh is always better.

First. dont steak them. Filet them and cut all the red meat out.
Second. eat em fresh. I have usually head and gut em right after catch but you can do whatever, bleeding etc you need to.
Third. marinate in cheap italian dressing
fourth. beer batter
fifth. slap yo mama

That sounds pretty quick and easy there feet wet. I think I’ll try it. Just remember that you have to “land” the sharks you catch with the head naturally attached. “land” means trailer your boat according to DNR. I made the mistake of de-heading them the first shark trip out, but I know better now. Not sure what the fine would be, but I’m sure it’s right up there with the rest of saltwater fish fines…steep!
