been catching a lot of shark lately…and i love shark nuggets/strips. Caught a nice bonnethead so gutted and bled it…packed it in ice with a few frozen water bottles in his belly…brought it home and fileted it… fried it up with some shrimp i caught… home made tarter and cocktail sauce…bacon/bluecheese coleslaw sliced cucumber and tomatoes
YUP! They make dang fine eating!! BUT yes you have to make sure to gut,bleed and ice them almost immediately…and Glenn just make sure you don’t tell them to do what we did Suffice it to say that Mr Green Jeans needs to know what kind of fish you’ve caught if he wants to look:wink:
In the future I’ll gut it and cut around the head as much as possible while still leaving the head attached…don’t know if that is what the locals would do but I’d also be interested in knowing if anyone else any thoughts?
I do know that the uric acid in their system can quickly taint the meat if the shark is not gutted and cooled quickly.
When catching shark to eat, don’t you have to kill them right away with a big wallop to the head. I have heard if you do not, they pee into themselves and that messes up the meat.
When I gut a shark I cut from the poop hole to the mouth…then around the sides if the head to the top…but leave head attached…I also cut a ring around the tail and partially separate the fin…but leave intact. In case I’m checked. Last time I took a sharp filet knife and also "flapped back most of the chin from the meat…leaving skin attached as the skin holds the urine from the shark ESP when it dies. Was given this tip from one of my old timer fishermen veterans at the hospital. Ice ice ice after bleeding…hang over the side…bleed …rinse and pack in ice. I put frozen water bottles in the gut cavity. Clean as soon as you get home…not a fish to leave sitting in ice! I love shark meat.
