Wanted to fix somethig different for lunch…had some fresh shrimp from yesterdays outing…so opened the refrigerator and pantry and threw this together. Have to say it was really awesome…and the smell of it cooking was absolutely…yummmm. Heres what I used and did…
Manicotti …cooked…drained and set aside
the rest of the stuff…
*spinach…I will be honest and tell you I cheated and used frozen green giant since I had no fresh
*cream cheese(8 oz)
*1 container phili Italian herb cooking cream(it too is thick)
*ricotta cheese
*some grated parmesan and romano cheese(shredded package stuff)
*marinara sauce( I used a new one by “World Classics” and it was REALLY good)
*shrimp, cleaned and deveined
while the pasta was cooking I did the following:
*turn oven on to 350…
*sauteed a little minced garlic in some olive oil and added in the marinara sauce to warm
>placed all the cheeses in a bowl and “mashed” together with a fork…yeah I know…theres probablly some fancy word for that:smiley:
>then I mixed in the thawed spinach( thaw on plate with paper towels)
>then added in the shrimp and grated cheese
take pasta shells and stuff…
pour 1/2 of marinara sauce in bottom of casserole dish
place filled shells on top
pour remaining sauce over the top and sprinkle with cheese
bake at 350 for 20 minutes
let stand for a few minutes after you take it out of the oven!
OK, so holy chit is all I have to say…so I don’t like shrooms or spinach, but if you put enough cheese on it you get Bonzo’s seal of approval (as well as Mrs Bonzo)…Roo licked my hand I got some firewood plus scored 82meals of spinach, shroom and shrimp manicotti from Mr and Mrs Penfishn…life is gooood!
you clearly had the word “mushroom” written on top of the container…hence it had to have mushrooms in it…unless, wait a minute, did you pull a fast one on Bonzo?

Gotta try that one. Looks great. My oldest daughter asked me the other day if I could re-make the crab-corn chowder. I may have to make this and do the chowder later! And here I am at work with a Diet Coke and a beef jerky. Mmmmm good lunch!
Penfishin, now that is a fantastic looking meal. Shrimp.spinach,cheese and marinara, yoweza!! The frozen spinach is the way to go. For the cost and ease of use, if you are baking it, frozen thawed and the excess water squeezed out is the way to go. You always have the best looking table.
