…was dinner tonight…very simple recipe and was D-e-l-i-c-o-u-s!
what you will need:
1/2 lb angel hair pasta
2 tbsp olive oil
3 cloves garlic/minced
1 can of italian diced tomatoes(undrained)
6 oz fresh baby spinach leaves
1 lb cleaned and peeled shrimp
1/2 cup whipping cream
1 cup three cheese italian blend shredded cheese
1/4 cup shredded parmesan cheese
optional…1/4 to 1/2 tsp crushed red pepper
cook pasta as directed on package
heat oil in skillet and saute garlic until tender…about a minute…add can of diced tomatoes in and simmer for another 5 minutes stirring occasionally…add spinach and cook for additional one minute just until leaves are wilted…add shrimp and cream and cook until shrimp are done gently stirring occasionaly…add in drained pasta and gently toss to coat…top with chees reserving a small amount and cover and remove from heat…allow to stand for aprox. 5 minutes until cheese is melted. pics:smiley:
Dessert…quick and easy “torte”
what you will need…
15 ginger snaps
25 vanilla wafers
1/2 cup chopped pecans
1/3 cup butter (melted)
8 oz cream cheese ( I actually used 12 oz)
1/4 cup sugar
1 tsp vanilla
fruit/berries of choice
crush cookies in zip lock bag
add becan pieces and butter with crushed cookies in bowl
press in to springform pan or pie dish covering bottom and sides
Bake at 375 for 5 minutes/ allow to cool completely
beat cream cheese sugar and vanilla until well blended
spread over cooled "pie shell’
top with fruit and refrigerate for at least 2-3 hours to “set”
this is a very fast and easy meal!
