Shrimp and Spinach tortellini

another quick and easy recipe…

what you need…

1 pkg(18 oz)refrigerated cheese tortellini
1/2 cup Kraft Roasted Red Pepper Italian with Parmesan Dressing
3-4 cloves of garlic/ minced
2 tablespoons olive oil
mushrooms(optional)
1 lb Cleaned medium shrimp( I use a little more)
10-12 oz baby spinach leaves
1/3 cup chopped fresh basil
grated parmesan and mozerrella cheese

cook tortillini in small ampount of hot water (or per pkg directions) and drain/set aside

saute garlic /mushrooms and basil in 2 tablesppons olive oil

add in the kraft dressing and cook for about 2 minutes

add in tomatoes(undrained)and shrimp…bring to a boil stirring gently to mix…when shrimp turn pink/cooked/add in spinach /stir and cover . cover and place on simmer for aprox. 5 minutes ,stirring occasionally

stir in pasta and cook for another 3-4 minutes stirring occasionally/add in 1/4 cup mozerrela cheese and top with shredded parmesan cheese prior to serving

this one was pretty good but if I were cooking it just for me…i would have added something to give it a little more “kick”
