Where do skipjack tuna rate as far as table fare?

You’re sure to get mixed reviews here, that’s for sure. Had skip jack raw with wasabi and soy, and it was pretty darned good. A little more sinew than sashimi tuna, though, I’ll warn ya. Best way is to take the slices/medallions of loin, dip them in soy, press into poppy seeds and quickly sear in pan sprayed with olive oil - serve rare. Dip in soy as you’re eating. Fresh skipjack is good, but it’s not sashimi.

I agree there is only a small pc that is good ate it raw. It was great I thought!!! Not the bloody part though!!

The loin is small - the bloodline is large - more oil & mineral flavor than YFT or BFT- but not gamy like little tuny ( bonito) thousands of tons of skipjack are canned and sold as dark tuna.
