I kept and grilled a skippy fresh last year because I had been told they were good…they are.

Almost all canned tuna (chunk light) is skipjack from the pacific. Next one I keep I’m going to can since it wont’ freeze well. I’m also going to try with a blackfin tuna.

Jordan, remove the whole side the same as with say a grouper, keep the skin on and hickory smoke it in a water smoker (180- 220) for about 3.5 hrs. take the fillets and remove the skin, blood meat and pin bones. the meat that is left will make the best tuna salad you have ever eaten. You can freeze it after smoking and it will keep just fine. This works well with blackfin as well.
