Smoked trout jerky

Thought I’d share some trout jerky I made. Made up a brine with some spices I had in the pantry. I covered the pieces a couple times during the last hour with some local raw honey a family friend gives us. Turned out great!

After the 24 hour brine…

2.5 hours in the smoker!

Looks tasty,wish I had a piece to put in my Duxbak coat tomorrow morning.
