OK, since that shameless begging is done with, has anyone smoked sea trout or redfish? I think the sea trout would be pretty good, it seems to have a touch more oil content than redfish or flounder.
I would love to try some striper, but I usually only catch one or two keeper stripers per year lol. I only know of one place I can catch them from shore or canoe with any resemblance of predictability, and that’s only during mid April.
I’m thinking something like alder or cherry with a bit of hickory for the sea trout. Any suggestions?
never tried it smoked but shark has a heavier texture much like salmon which most everyone knows is good smoked. i could see that one working and i have plenty id be willing to donate to the cause if ya wannna try it.

I’m by no means above making some smoked mullet, but catching them, filleting them, and smoking them on the same day is asking a bit much. I’m afraid if I let them sit in the fridge overnight to smoke the next day, they’ll mush up on me.

As long as its fresh, Smoked mullet is delicous. Have a friend who brines it then smokes it for like 12-18 hours. It comes out kinda like fish jerkey - does king and or spanish the same way. Best beer drinking snack in the world IMO.
