i blackened it once and it was good. i think that was the only time i’ve eaten it

They are good almost any way. I like them cooked in the smoker until they are just done.

But you just can’t beat some House of Autrry and a Crisco bath!

I haven’t been able to get out there for several years. I need to pick a good day and go!

Blacken them and serve with grits & ice cold sliced tomatos. Also have some molasses handy, the flavors really pop when you have a little molasses along with the fish and grits.

I brushed some with some mango chutney/salsa type stuff that I get from cosco then battered and fried and it was delicious…have also grilled with creole or blackenig season as well…its a nice fish to eat:stuck_out_tongue:…I also like the house autry seafood breader. Cant wait until they start showing up nearshore!

I’ve grilled SS filets with good ol’ Kraft Italian Dressing, and I’ve sauteed them in the the pan with butter, lemon and Paul Prudhomme’s fish seasoning. I tell you, I mix up a lot of my own dry rubs and seasonings, but Chef Paul’s Meat Magic and Fish Magic are hard to beat.
