spadefish

ive cleaned and cooked them a couple times, but now that im spearfishing i can pretty much get as many as i could want. ive fried them and blackened them so far and tasted great, but am open to other suggestions as well. perhaps someone here has smoked them and can say good/bad on that? ive also heard they dont freeze well, but also been told as long as the red meat is cut out they freeze fine. anyone have any input on em? this is a still frame from my gopro my last dive and is only a small fraction of the swarm that was up high in the water column. i only shot one as im a firm believer in only take what you know you will eat, but the low lying fruit is quite thick!

Fried up like flounder, taste is as good or better than flounder IMO

Fresh is great. Cook it anyway you like. Fried, grilled, broiled, sautéed, whatever. I froze some once and did not like it at all. Very mushy and mealy.

Vacuum seal and freeze is OK, but fresh is better. I also like using them in fish stew. Just don’t have a way to get them any more.

We got some this past weekend but I haven’t cooked any yet. We just finished the last of the grouper that I didn’t vac pack and freeze. I have done spade on the grill before but I had to freeze most of this spadefish so I hope it doesn’t get mushy. I’ve done a hoisin/soy glaze with sichuan peppercorns on the grill before and it made the spadefish awesome. I’ll probably try that again.

Looks like you and the girls had a great time. Looking at the pic the ocean sure looks sublime. My son just brought me a big bag of Spade that him and some co-workers caught. He described bringing one to the boat like pulling a full 55 gallon drum full of water up. :smiley:

looks like you could skip a rock to africa in that picture! my wife’s parents opted for crab stuffed flounder and grilled grouper when they cane down for a visit, but ill dig out the frozen spadefish soon enough and see how it turns out. ill definitely have to try the stew idea though. ive done the grouper in a curry style stew and it turned out great!
