If they’re anything like the king I just fried up, they’re delicious. Different texture from most fish I have had before.
I would smoke some and make a fish dip or pickle them.

Dad would cut into steaks and mom would bake them with butter lemon salt and pepper. I learned later in life they are good like that if you remove skin and blood line. Dad has a stronger pallet for strong fish taste than myself.
Thanks guys for the info. Went today and gave the 13 keepers to buddy fishing with me that he is gonna smoke.
Any advice y’all wanna toss my way on smoking them would be great.

Mine and your Dad would get along great!! Give em both a meal of sardines on toast and they would be in their glory, I’d imagine.
