Got a size-able ray n the harbor the other night. Filleted it and marinaded in BBQ sauce. Wrapped n bacon and cooked on the grill. It was ok but not great. Any other ideas?

I’ve had some recently that was fried. With that said, I agree with Cracker Larry, bait, it was awful!

some restaurants charge good money for them. I don’t understand it. I’ll take a fresh fried mullet any day over one.

yea i wasnt too impressed either. IF i was starving maybe… way the fishing has been it might come to that lol
The big ones CAN taste awful, best thing to do when you catch one is to immediately kill it, cut the wings off, peel the skin off with a catfish Skinner and put it on ice. No need to fillet it because if you cook the skinless wings the meat will come off the cartilage with no problem.
2 oz. melted butter
2 tbsp. lemon juice
1/2 tsp. dried parsley
1/8 tsp. paprika
1/8 tsp onion powder
1/4 tsp. ground white pepper
1/4 tsp garlic salt
Set broiler on low to medium. Combine melted butter and lemon juice in a small
bowl. Cover a broiler pan with foil and brush with 2 tablespoons of mixture. Mix together garlic salt, parsley, paprika and white pepper. Sprinkle spice mixture on both sides of fillets.
Broil fillets until meat flakes, about 10 minutes. Brush fillets again with lemon butter and sprinkle with paprika before serving

Some people will eat anything. Or they are very poor fisherman
But if I were stuck with a stingray, and couldn’t catch a fish, I’d use it for crab bait and catch me a mess of crabs with it, throw the cast net a few times and catch some shrimp while I was waiting on the crabs to come, maybe dig a few oysters or clams to go with it, add some taters and corn…
Eating is easy in the Low Country right now, why in the world would you be eating stingray:question:
I don’t think even the native Americans ate stingray, and they were the first to eat oysters and crabs. I’m thinking that first man must have been pretty hungry to try either one.
Edit: I feel about the same way about sharks though. I hate to waste a good crab on a shark. I’d rather eat the crab. To each their own

I’m not saying you should throw the Trout, Flounder or Sheepshead out of the cooler to make room for the rays or anything ; )

Keep in mind that there are two basic types of stingray here-- Southern and Atlantic. The Southern is the giant of the two, and I believe it is the more earthy tasting one.
The Atlantic is smaller and seems to be a touch less common. They typically only grow to a few pounds. These tend to have a very sweet flavor that is drastically different (in my experience) from the Southern stingray. It really does taste like scallop— except overpoweringly. It’s almost sickeningly sweet if you fry it fresh off the ray. I think soaking it in some brine would help with this.

Upon a quick Google search I’ve only eaten the southern, and for a matter of fact I’ve only seen an Atlantic. None of the stingray I’ve caught have been in the surf.

Lay stingrays wings out on cedar plank and spread cow manure over them. cook on grill. when done eat cow manure and cedar plank. throw stingray wings away.

cracker, I need to fix you some properly prepared shark. I’ve tried some stingray… It’s not worth it and all the crap about “punching” out their wings for scollops:smiley: Well when someone tells me that I know that they are full of crap.
I would never ever do this today because it would be wrong and illegal. But this time of year if you have a dock full of kids catching a bunch of baby sharks and you just bait the hook and grab all over 14" and while still skimming off two little fillets and put the rest in the crab pots after about 20 or 30 you can have a nice mess to lightly batter and fry.
Also get a fresh wiggly Bonnet Head and immediately gut it, rake the back bone, dip it several times over board and then put it on ice. 1x1" chunks battered and fried. what stingray…

what the immediate gutting for and rake back bone? whats that

The only way to eat one. After a shark dies, its urea turns to ammonia, which will permeate the meat. That’s why I bleed them. They secrete the Urea through thier skin.
I will not eat a shark any other way, if one is not bled out and put on ice quick I’ve heard people brining the meat to remove the ammonia smell/ taste. I’ve tried it on a couple of big ones that were given to me. Still not worth eating imo.
I usually go to the extreme and bleed/gut any fish 20+ pounds if I have the chance.

I guess I should explain a little better. Basically when you gut one you pretty much bled it out, by scrapping the back bone you remove the kidneys ( or that’s what I believe that is) and help remove some more blood and mess before icing down.
Let a shark die in a live well and sit for just a short while before cleaning or Icing down and you’ll understand why most people won’t eat shark. The can be a rank smelling nasty thing if you let them.
Got it. Thanks for the break down.
