Never had any luck stuffing peppers and getting the pepper to cook and keeping the cheese inside.
Got a bunch of cow horn peppers so I split them and de-seeded put on the grill with a little garlic salt in the middle and lightly browned them. Took them in the house and smeared some cream cheese, and then added some sharp cheddar. put in the microwave for 30 sec. and cheese melted in cooked peppers and stayed inside. mmmmm. no hassling with toothpicks .
