Well after I had some luck and someone donated some Mahi to my freezer I whipped up this little recipe. I took some fresh crab meat ((A bit of claw and a bitt of white)) And mixed it with sauted garlic, green, red, and yellow bell peppers, sweet white onions, some salt and pepper and butter flied out the filets. I stuffed them full and used a skewer to keep it shut. I then took fresh pineapple and grilled it until it was lightly caramelized, mixed it with fresh cilantro, lime juice, red onion, red and yellow bell peppers, tomatoes, cucumbers, and sugar. I let that sit for a good bit. In a smaller pot I took coconut milk, white wine, minced ginger and jalapeno and reduced it by half, added butter and whisked until it was nice and creamy. Sear the fish on one side and finish cooking it on the other side in the oven at 325. Comes out nice and moist, slab some butter on top when you slip it in the oven. Serve it over a bed of fresh spinach greens and its good to go
