Shrimp Ceviche Cocktail
1/2 cup chupped or thinly sliced onion (rinsed)
6-8 cups water
1 cup of fresh lime juice
1 pound shrimp(med-large)
1 cup chopped peeled cucumber
1/2cup ketchup
1/3 cup chopped fresh cilantro
1-2 tablespoons mexican hot sauce
1 1/2 tablespoon olive oil
1/4 tsp salt
Bring water and 1/4 cup lime juice to a boil…add shrimp…cook until done.(4-5 minutes)
Drain and peel shrimp
place shrimp in a bowl and add remained of lime juice,coating well. Cover and refrigerate for one hour.
Stir in onion/cucumber and remining ingredients. serve immediately or may chill and serve later.

Crab and Shrimp and okra “Beerpuppies”
1 cup self rising cornmeal mix
1/2 cup self rising flour
1 cup medium size chopped fresh shrimp
1 tsp creole
1/2 cup (mixed)diced onion/red and green pepper and celery(can use frozen such as mackenzies)
1/2 cup frozen cut okra thawed and chopped
1 large egg lightly beaten
2 tablespoons sugar
3/4 cup beer (cook must drink the remainder in can:smiley:)
canola oil for frying
combine corn meal and flour…add in sugar…add in shrimp and veggie mixture…stir in egg and beer just until moistened. let stand 5-7 minutes. ( I divide flour when using half for shrimp with the okra/onion/pepper…use the plain half for the crab with a little bell pepper which is also optional)
pour oil to a depth deep enough to fry (float) in drop batter by spoonfuls into hot oil until golden brown…can keep warm in oven.
