Sweet baby rays

  1. baby rays, 10 - 14 in. wing spans.
  2. cut off wings as close to back as possible.
  3. scrub wing skin with ss scrubie “not sos” or soapy ones. Plain stainless steel.
    4.Cut wings into 1/4 in. strips either direction.
  4. Batter in autries or a corn starch blend, put in frig for 30 min. shake again & fry @ 375’ for about 4 min. until very crispy.
    tarter sauce, lemon, hot sauce, etc. Treat em’ like calamari but crunchier.
    You don’t have to worry bout the skeletal of the wings. If you cook em’ well done, they’re less noticeable than herring bones fried out.

I like Rays, I fillet the wings like a flounder and fry.

Did it once. Not bad.

Won’t do it again. The juice was not worth the squeeze.
