swordfish dinner

had never eaten it before. Got some fresh from brother-in-law. brushed with a little olive oil with a little fresh lemon juice…rubbed with a little fresh basil,rosemary,touch of smoked paprika, little salt ,fresh ground pepper and capers…pan seared…served with fresh green beans with diced taters, rice and a old fashioned tossed salad…you know…the vinegar,mayo dressing type. It was really good. didnt have any tarragon or would have tried a recipe a friend gave me for cooking it with that. Isnt my most favorite fish…but was good.

any one have any good recipes for this? I still have a couple steaks left

i do this alot with salmon, worked great with my alaskan halibut, and i bet it would work with swordfish too.

brown each steak in olive oil each side, but dont cook all the way. set fish aside on a separate plate and dice up a medium onion and place in skillet with a big spoonfull of garlic and cook down the onion. add a tablespoon of basil then a big can (28oz i think?) of diced tomatoes and heat until simmering. add fish pieces, cover, and simmer another 10-12 minutes. we usually serve that over rice but pasta of choice works good too.

I really like mine cooked on the grill, season to taste but I love the open fire concept with a touch of Pecan wood as a natural seasonong

Not a big fan of swordfish, but grilled with olive oil, salt, pepper and fresh lemon juice is my favorite. A little thyme and or parsley is also nice. The texture lends itself to the grill IMHO. Yours does look pretty darn good.

I am not Making fun of anyone…but most people over cook sword fish

needs to be med like salmon and tuna…tuna is best rare in my book

I know it’s Probablly better on the grill…but was really suprised how good and how moist this was…and would cook it again this way…but will try the grill to. Talked to a chef today who gave me a few more recipes and tips…as well as a marinade to try…
