gonna be making deer chili soon and found some smoking chips made from the barrels used to age tabasco pepper sauce in. anybody ever try those before? im curious as to what theyll do to ground bambi before i put it in the pot to simmer several hours.
I would say the smoke will burn your eyes.The flavor would probably be good,that is if you enjoy Tabasco. If the barrels were oak that would also add flavor.Good luck

in the process of “smoking” the meat now. dont have a gas grill but i lit some charcoal in a cast iron skillet and put that at the bottom of the grill. put the deer in another cast iron skillet and put that on the top rack. no its not an actual smoker by any means but the inside of the grill is plenty filled. as for the smoke effect on the eyes/nose its not like taking tear gas to the face again like in boot camp but its still noticeable when you purposely stick your nose in the smoke to smell it lol. the rest of the pot is laced with 2 serrano peppers and a red habanero…otta be good!
Where might I be able to get me some of these “hot” chips?
just grabbed bowl #1 and it turned out great! as i always make my chili the smoke flavor from the meat worked its way into the whole pot after simmering in it a while. dont think they added much heat, then again i did say i put 2 serranos and a habanero in this batch so i doubt id notice it if they did.
thisguy: i found em at pepper palace in downtown charleston, which is right beside the city market. if youre at hymans walk down the left side. once ya get in pepper palace theyre not too far inside and on the right side shelves.
