It’s called maximum age and reproduction rate. Maybe you should educate yourself on the biology of the fish you are sporting.
A tarpon doesn’t reach reproductive age until the flounder is nearing the end of its life. That 12 pound flounder has already made lots of babies, and at 6-7 years old that tarpon probably hasn’t made one. That makes it more valuable to the ecosystem, and resources.
That hypothetical 12 pound flounder would probably be dying of natural causes and becoming crab bait soon.

I have no idea how much ice you need, but I have heard of cooking method from Puerto Rico Where you steam the fish and then mash it between large rocks or cinder blocks/stones and then you just eat whatever goop oozes out and discard the rest. This method doesn’t even require cleaning the fish, which I am told is a real pain the ass.

There is nothing wrong with snapping a quick pic and releasing if the angler wants to. I’m sure Fritz knows how to handle fish better than most who commented…

Jerry adult count them crossing into state waters? As far as numbers caught, I do not know. I don’t fish for them. I would say your catch estimate is low, I know one individual that catches 50 or so a year.
I imagine the tarpon will be swimming with his buddies tomorrow telling them about how he was abducted by the aliens in the big white UFO that floats, and that walk on these weird looking things called “legs”.
