A very basic recipe that works pretty well:
Mayo, diced onion and dill cubes with a little of the dill brine. Mix together and place in the fridge for a few hours. Stir again and serve. You can use onion powder and dill spice for a slightly different flavor.

My new go to sauce(hey batter) is a Siricha/sweet Chili cream sauce.
Siricha
Sour Cream
Sweet Chili Sauce. Play around with the amounts until you get it how you like it.

Try that Siricha or Harissa sauce with 2% Greek yogurt instead of sour cream.

Dukes Mayo, Dill Relish, Lemon Juice, salt and pepper is the basic ingredients I use. Sometimes I add a some tabasco sauce or a little Old Bay to spice it up.

Thanks ya’ll ; I’m saving all of these recipies they all sound real good , I never thought of old bay before!!!:smiley:

I’m coming in late to this, but mayo, sweet relish, mustard and a little lemon juice will make you forget other tarter sauce recipes!!!

If it’s good fresh fried fish, my favorite sauce is no sauce. After that is a good Remoulade with some added spice.

I’ve been using the same recipe as CaptFritz.
