oyster dressing and i always like the rockafella
oysters…anyway you cook them…and heres a few shrimp recipes
SHRIMP PIE…(dont laugh…but have had this with oysters too)
ingredients, ritz crackers,shrimp,cheese,salt,pepper,eggs,milk
butter bottom of caserole dish
place thick layer of ritz crackers on top of this(,crumbled)
place layer of peeled and deveined shrimp(At least 1 lb)
add,sprinkle with 1/2 cup cheese,salt and pepper
(you can also add sliced fresh mushrooms,sweet onion or bell pepper)
cover with another thick layer of crumbled ritz crackers and cheese
pour over this 2 cups milk and 2 -3 eggs beaten(like you would in macaroni)and dot with butter…bake at 350 until bubbly and brown
you can also use bread crumbs or saltines…I dont measure anything, so you just have to guess-ta-mate a little…
Pickled Shrimp
2 lbs shrimp lightly boiled and cleaned
1 bell pepper chopped into slices or pieces(some prefercut in rings)
1 sweet onion(prepare as above)
2 large bay leaves
1 and 1/2 tsp celery seed
2 tbsp mustard(dry or prepared)
1 clove garlic (chopped fine)
1 tsp.tabasco sauce
1 cup catsup
1 cup vinegar
1/2 cup salad oil
1 tbsp sugar
1/2 tsp salt and pepper
1 tbsp worcestershire sauce
*mix all ingredients together,add boiled and cleaned shrimp,refrigerate and allow to marinate for at least 24 hours.
heres another shrimp recipe since it is shrimp season…
Shrimp and Corn casserole
1 can 16-17 0z cream corn
4 eggs lightly beaten
3 tbsp butter or margerine melted
1 cup light cream
1/8 tsp mace
10-12 ritz crackers
2 cups shrimp chopped coursely
pinch of salt and pepper
in bowl mix all ingredients together except for crackers…pour into 2 quart greased casserole dish,top with crumbled crackers and dot with butter…(being form the south I sometimes also sprinkle with a little bit of parmesan or cheddar cheese) bake at 350 until light brown and “set”
Shrimp and rice casserole
2 cups cooked rice
2 cups shrimp boiled and peeled
small sweet onion minced
small bell pepper(or to taste) minc
Crab Casserole
1 lb claw meat
1 lb backfin crabmeat
1 cup mayo
1 cup half and half
6 hard boiled eggs chopped
2 tbsp Old Bay seasoning
1/8 tsp black pepper
1 tsp Mace
½ cup chopped celery
½ cup chopped onion
½ cup chopped green bell pepper
2 sticks of butter
1 cup Pepperidge Farm Dressing
1 tbsp Worcestershire sauce
1 tbsp Grey Poupon
saute’ vegetables in butter until onion nearly clear add everything else and work into 8X13 dish. Melted butter and bread crumbs or crushed Ritz crackers for topping.
350 degrees for 30-40 minutes
