Tips for Soaking Bait

Friend of mine and I are planning to give our flyrods a rest this weekend. We don’t bait fish much, at all, so looking for some advice on technique.

It looks like a low tide on Sunday around 5:30pm. Our plan is to fish the falling from 3-6ish and use frozen cut mullet on a carolina rig. Can anyone here provide some insight into what weight line is best? How heavy of a sinker is appropriate? I figure looking for deeper holes near structure, or where creeks empty into bigger channels to intercept the fish as they move off the flats.

Am I on the right track? We aren’t picky about the species, just want to feel something on the end of the line. Any and all inputs appreciated!

Here is what I would recommend:
Carolina rig
circle hook
25 to 30 lb leader
1/2 oz egg sinker or less

He must Increase, but I must decrease. John 3:30

i normally do a 1 oz sinker in current, about half of a decent finger mullet with a small circle hook and 20 lb leader
