Minorocan stlye “Perlo”. I like to let it rest in the frig for a few hours. Then just heat it up when it’s time eat.

Rick, I don’t really have a recipe, the basics are:
Brown sausage in a pan.
Remove the sausage and pour off the excess grease. In the same pan, cook until softened.
1 cup finely chopped sweet onions
a couple sweet peppers finely chopped
1 stalk of celery diced
A couple of whole fresh datil peppers
Add a can of petite diced tomatoes and the sausage. Simmer for about 15 or 20 minutes.
Add 2 1/2 cups water bring to almost a slow boil.
Add 1 1/2 cups of rice. Reduce heat and cover. Add water as needed.
Just before before you think the rice will be done. Add 1 lb of peeled fresh shrimp. Let rest for about 5 or 10 minutes so the shrimp will finish cooking.
Don’t forget to remove and discard the datil peppers!
You can use a couple tablespoons datil pepper sauce in place of the fresh datil peppers.
