Top2Bottom's Ceviche - too good to not share!

I’ve been waiting for the time to make Russ’ famous ceviche, and last night was perfect as we have fresh wahoo which Russ says makes great ceviche. Let me tell you, “great” is an understatement. This stuff was fabulous. The recipe credit goes to Russ as all I did was chop and mix up the ingredients. It’s quite simple, really pretty, uses fresh ingredients and would be the hit of any party!

1 - 1 1/2 lbs. fresh wahoo or other firm fish cleaned of any bones, tissue, etc. and cut into small pieces

3/4 cup lime juice

1/4 cup lemon juice

1 small red onion, chopped fine

1 big Johns Island tomato, chopped

1 jalapeno pepper, seeds and stems removed, chopped fine

1/2 bunch of fresh cilantro, chopped

2-3 garlic cloves, minced

olive oil

Mix ingredients together, refrigerate and allow to “cook.” It was probably in the frig. for 2 1/2 hours before I drained it and drizzled with just a little bit of olive oil. We ate it with Tostitos scoops flavored with a hint of jalapeno. The only thing I did different from what Russ’ recipe called for was to add about a quarter of a green pepper, chopped finely. A yellow pepper would add more color, but I didn’t have one…

While I’d have been fine with just ceviche and chips for dinner, Jack, of course, had to add in some fresh steamed crabs. I swear, he’s gonna start growing a shell and walking sideways!

Edited to add the garlic as I knew I was forgetting something…

Dang, that do look tastey. Gonna have to try that one ASAP.

Well, seeing as how I just finished up some awesome spagetti with a side of shrimp dip for dinner I guess I’ll make some this weekend:)

Russ actually has two recipes, and both seem quite different. Here’s the other one which he says is sweeter and not as tart as the ceviche recipe he gave me -

Poisson Cru:

3/4 lime juice, 1/4 lemon juice, diced tomatoes, red onions. Marinate 1/2 lb. cubed fish in lemon and lime juices, tomatoes and onions until desired level of “cooked” is achieved, usually overnight, less for more delicate fish, drain juice, add chopped papaya, mango, kiwi fruit, coconut milk.

Went out gigging the other night and came across some sheepshead. I’ve been having an itch for some good ceviche, so I got out the dipnet and gave a sheep a good nudge in the tail with the net in front of his face and he swam right in. Since that one didn’t have any gaping wounds, I figured he was safe to turn into ceviche (I’m sure a gigged one would have been fine too). I recalled seeing a ceviche recipe on here in the past and a search brought me here. Just thought I’d say thanks! Tasted fantastic and I’ll definitely be making it again.

thanks for bringing this back up…I needed a reminder of Russ today…good stuff…and he is very much missed…he would be glad to know you enjoyed one of his recipes…

I miss Russ too bonzo…and think of him every time I see a sailboat…or see a red cooler…use to leave him leftovers in his red cooler beside his door when he lived on James island…we were looking at the book of pictures and story he had bound for me that I had written about daddy…we were blessed to share a small part of his life and adventures… … I hope he and Stan are sharing a few laughs together… Life is way too short.
