I’ve been waiting for the time to make Russ’ famous ceviche, and last night was perfect as we have fresh wahoo which Russ says makes great ceviche. Let me tell you, “great” is an understatement. This stuff was fabulous. The recipe credit goes to Russ as all I did was chop and mix up the ingredients. It’s quite simple, really pretty, uses fresh ingredients and would be the hit of any party!
1 - 1 1/2 lbs. fresh wahoo or other firm fish cleaned of any bones, tissue, etc. and cut into small pieces
3/4 cup lime juice
1/4 cup lemon juice
1 small red onion, chopped fine
1 big Johns Island tomato, chopped
1 jalapeno pepper, seeds and stems removed, chopped fine
1/2 bunch of fresh cilantro, chopped
2-3 garlic cloves, minced
olive oil
Mix ingredients together, refrigerate and allow to “cook.” It was probably in the frig. for 2 1/2 hours before I drained it and drizzled with just a little bit of olive oil. We ate it with Tostitos scoops flavored with a hint of jalapeno. The only thing I did different from what Russ’ recipe called for was to add about a quarter of a green pepper, chopped finely. A yellow pepper would add more color, but I didn’t have one…
While I’d have been fine with just ceviche and chips for dinner, Jack, of course, had to add in some fresh steamed crabs. I swear, he’s gonna start growing a shell and walking sideways!
