This one is for Lynnmcd, Sellsfish and Jazzed. Had some beautiful trigger fillets, courtesy of Miss Amanda, that I wanted to prepare in a manner worthy of their culinary reputation.
Sautéed the trigger fillets about 1/2 done in EVOO. Removed the fish and finished in a 375 degree oven. Added some shrimp and butter to the pan and cooked 3/4 done then removed the shrimp. Added a tablespoon or two of flour to the hot pan, stirring to make a light rough. Deglazed the pan with 3/4 cup chicken stock, 1/2 cup white wine and a squeeze of fresh lemon juice. Added 1/2 jar of capers, some diced up sun dried tomatoes and the partially cooked shrimp.
Reduced the sauce until it thickened. Plated the fish over spaghetti noodles and topped with the sauce. A little Chardonay and some crusty bread finished it off. Nice Sunday Supper!

NICE! So if I ever do catch some of these elusive Trigger fish. I would like to bring them to your house. ; ) Mahi and french fries were good tonight. However, I got real lucky on my first try with Vidalia onion rings ; )
