Triggerfish Bonanza

40 Triggerfish filets… nice problem to have

My solution… have a triggerfish bonanza… oh and vacuum seal bags!

LOTS of knife work later…

Fry bits and the makings of some good ol fashioned trigger burgers. I’ve found that I can freeze the trigger burgers in packs of 2 and they do great. super easy dinner for the wife and I.

I always cut the pin bone section out as I really cant bother with pulling out 40 filets worth of pin bones out with pliers. no worries, they don’t go to waste. time to make some stock. I combine the bone sections with the veggie scraps that are created from the burger fixins. then I add some fresh herbs from the garden and simmer for hours. turned out great, cant wait to make some fish soup with it

Time to fry up those chunks. Set up the 3 part dredge and grub down:

Fried fish can’t beat it… except for a good ol fashioned triggerburger :stuck_out_tongue:

Just a start… freezer is jammed with goodness. Good start to the spring offshore season :wink:

Looks dericious!! Panko is definitely the way to go.

How well does trigger freeze? Obviously a vacuum sealer would be used but I know some fish don’t freeze well.

Triggerfish like other whitefish freezes excellent, the quality will be much better if you use a vacuum sealer. Do not freeze in freshwater!

One of my most favorite fish to eat. The only time I catch them is in the Keys. Great looking burger.

I remember reading about this a couple years ago. After reading it, when I have fish to freeze I make a bowl of water and sea salt (lots of it) and dip the filet in it before placing in the freezer bag (vacuum seal-type).

If you’re lucky enough to be fishing, you’re lucky enough.

I’ve used that Trigger recipe a couple times…excellent.
