Trout Burgers

I like the taste of trout, but it tends to be a little soft fleshed for my liking. A couple of months ago I decided to make the fillets into patties with very good results. I do not cook with measurements, but here are the ingredients:

Trout fillies cut into 1/4 cubes then chopped to break down some more
Egg whites
chopped green onion
minced garlic
bread crumbs (Panko worked best so far)
Lemon juice
Salt and pepper

Combine all ingredients. Add egg white and bread crumbs to get a mixture that will form and hold in a patty. Pan fry in olive oil. If you want some extra crunch, dredge in Panko before frying.

You can easily change up the ingredients to alter the flavor like adding sesame oil, teriyaki, and ginger for an Asian flavor. Best part of the burger is the texture. The trout seems to work really well for this.
