I have read a lot about sheepshead fishing and would like to give it a try. I went today for 2 hours at 41 bridge in mt pleasant but no luck. Current strong and couldn’t keep my bait crabs straight down. Fishing by myself and going in the morning and would be great to learn how and where or what to look for so I can take my 3 boys. Someone was kind enough to direct me on reds a while back and

I think you are in the right place. No need to fish really deep-alot of times you can find them in <10 feet of water and the current is easier to deal with.
This is what works well for me:
Fish both sides of the low tide. That way the current is slower and the barnacles are all exposed. Scrape them off the pilings with a rake or crowbar to chum. I typically use a carolina rig with as small of an egg sinker as I can get away with and 20# flouro leader (mono will work too) and a 1/0 owner circle hook. If the current is really slow, I’ll ditch the carolina rig and tie my braided mainline to the leader with a uni-to-uni knot and add a piece or two of splitshot. Be ready to reel fast as you lift the rod (don’t Bill Dance it!). Your location should be fine, just need a more fishable tide and move around if you need to. Good luck.
