venison. best way to cook it

okay i posted in off topic and hunting but i think i actually found the right secton this time. any good marinades/rubs/recipes for venison? never cooked it before and have no idea how. and and all recipes ideas are welcome.

Venison tends to be a little dry because it has so little fat on it, so it needs some moisture to help it out. One easy recipe that works well with venison, or a beef roast, is to rub it down with Lipton’s dry onion soup mix and place the meat in a Dutch oven or heavy pot with a lid and add a can of cream of mushroom soup and 1/4 cup of water. Cook covered until done. You can also do this in a crock pot.

many think its wrong to do but i cut the tenderloins into chicken fingers and nuggets and deep fry them. always a big hit at parties.

Never was a huge fan of cubed steak (venison or beef), but I’ve figured out how to cook it such that it’s really tasty. I sprinkle the cuts with Adolph’s meat tenderizer and onion powder or onion salt and let them “marinate” in the frig. over night, making sure to flip the bag once. I dredge the cubed steaks in flour seasoned with salt, pepper and Cajun seasoning and fry them in an iron skillet with about a quarter cup each of margarine and canola oil. You can make brown gravy with the small amount of drippings left by adding Sauer’s brown gravy mix and water. Not sure if the meat tenderizer and onion really do anything, but this works well, and I got twice as much cubed steak than I ordered at he processors. Venison stew meat makes a really good stew cooked in the crock pot with onions, celery, can of diced tomatoes, carrots, potatoes, a little bit of dry tapioca and some spices to your liking.

Mustard fry the cubesteak!!!
Take half yellow mustard and half pepsi and mix together.
Cut cube steak into nuggets and marinate in the mix above.
Shake off marinade and dredge in House of Autry seafood breader.
Deep fry or pan fry until golden brown.

Very simple and tasty. Trust me it is worth trying.
You can also due this with a backstrap, but I prefer to grill mine.

my wife takes the cube steak; coat with flour/salt/pepper. then she quick fries both sides just to keep the coating on. put in crock pot with a can of cream of mushroom soup/i can water/i packet lipton onion soup/cut up onion (large pieces) let cook for a good while. cook up a pot of rice and there you go.you can cut it with a fork. add a side such as fresh asparagus or a medley of fresh broccoli,cauliflower and carrots. mmmmmmmmmmmmgood cracker!

hey dmatheny; i need to try your way also. sounds really good. i use the mustard to coat a beef or pork tenderloin before putting on the grill.

Coolbreeze you definitely should. I have been doing it for years and it always goes over well. It doesn’t have a big mustard flavor and the pepsi gives it a little sweetness. Texas Pete finishes off perfect.

Most methods and recipes that work with beef go pretty good with venison, but most folks step up the seasoning a little. the best venison i’ve eaten was a yearling doe. (killed in frustration and i’m not proud) But i took a whole loin, added some of my usual steak rub to it, placed it on the smoker at 250 degrees, with slight applewood smoke, until it reached MEDIUM doneness. Wrapped in foil for 15 minutes to rest and it was incredible! i was watching football and drinking, but it should have been served like filet!

Venison Chili is very good. Venison Tacos are a good meal as well. You can also make a meatloaf out of the burger and ground sausage. Mustard fried cube steak is always a hit

eight, take those back straps, cut them in about 1" squares or so, and marinade them in some beer, worch sauce, & salt/pepper for at least an hour. Take em out, slice em in the middle (not all the way in half), put a chunk of onion & a little bell pepper in the middle, wrap a half slice of bacon around it hold it on with a toothpick, and throw them on the grill. This is my personal favorite. Careful though…you’ll hurt yourself eating these.

We have a different variation on the mustard fried cube steak. First cut the cube into strips and marinate overnite in a mixture of yellow mustard and worcestershire sauce. Take strips out of marinade and drop into a paper sack with flour and healthy amounts of salt and pepper. Drop in oil and fry. Enjoy!

Oh well - I guess I’m the odd one. I like to cook venison just like I cook beef. Burn it on the outside & leave it raw in the middle. I never marinade meat. If it’s not good the way God made it - I wouldnt shoot it. That simple.
