cooked some venison chili last night for my girl and I, went alittle more veggie this time for her, but I ended up liking it more than my normal chili. it turned out awesome esp. with the cold last night and made me want to go hunt this weekend. easy to make in about 2 hours
Brown off venison, drain fat, add to large pot, add all ingredients except beans, bring to boil stirring frequently for 5 minutes then simmer on low for 2 hours stirring every 15 or so, add kidneys last 30 mins to prevent them from getting mushy
2 lbs ground venison 1 lb lean/1 lb not so lean (brown on stove)
2 fresh tomatoes (diced)
1 of each green, yellow, orange, red pepper (chopped)
1 large yellow onion (chopped)
2 ears yellow corn
2 ears white corn
1 16oz can tomato sauce
1 16oz can stewed tomatoes
1 tbsp sugar
half cup of my spices mostly chili powder, onion powder, ground garlic, cumin, and cayenne pepper
1 tbsp of tiger sauce
1 tsp salt
1 16oz can light red kidney beans (added late)
top with a dallop of sour cream, hot sauce and some cheese and its ready
Your chili looks great. I like the cheeze and sour cream addition. Tantalizing!
Me and 2 buddies ground up a deer and a half yesterday in about 3 hrs. Ended up with 35 lbs or so after adding ground pork fat and re-grinding. All neatly packaged in 1.5 lb increments.
Seahunt, don’t put no hammy burger in it… do it as d’man say. It be real good!!! You may not want chili any other way. Use your spaghetti recipe w/ it too, really really good!
