Venison Recipe's

What is your best recipe for a whole loin? I usually just cover it with olive oil and salt, then grill it. Really curious what everyone else does with the loin.

Garlic, dales, italian, rosemary, & salt/pepper, Marinate 24 hrs… normally makes it taste good to me!

ive always sliced mine in 3-4 depending on the size of the deer, then cross cut to make steaks. if theyre a bit thick ill smack em with a meat mallet then grill as always. for marinade i like equal parts soy, worchestire, heaping spoonful of garlic, and another spoonful of brown sugar. pepper when on the grill and cook until medium rare.

Whole loin, split in half soak in water for 30 min or so to bleed out. Pack inside with jalapenos, cream cheese, garlic powder, salt, pepper, then close with wrapped bacon. grill until bacon is cooked. Slice and serve.

Get fancy and slice loin into individual servings and do the above.

Just to make it clear, most call the back strap the loin, I do.

The thing with a deer loin is it is very blood rich, if not soaked it will have a very strong (livery) flavor.

Go simple and slice into strips rinse in water, simple garlic powder, salt and pepper. Pan fry in a tiny bit of olive oil.

Milk will draw the excess blood out quicker than soaking in water.

Olive oil, salt, and pepper. Get the grill as hot as you can get it. Thrown them on and sear them, take them off, and eat them RARE.

what phinfreak said, the rarer the better.

I like to wrap the whole thing in bacon and cook it over charcoal until the bacon is extra crispy. I use a meat thermometer to make sure I don’t over cook it.

Sometimes I’ll marinate it in soy sauce or Worcestershire for a little while before wrapping it.

i like my bacon wrapped in bacon lol

I like to slice the back strap into slices about 3/4 inch and coat hem with dijon mustard. Then roll them in Italian bread crumbs. Saute in EVOO for a minute or so, flip over and do the other side.

1 can of soup per lb plus one can of water
For 6 -8 hrs.

R u can put it in the oven for 1 hr@350 deg.

One of my favorites is to inject a whole chunk of backstrap with roughly equal parts of terriaki, soy, worchestershire, and Sticky Fingers Carolina Sweet. Then season with Lowrys, garlic salt, and lemon pepper seasoning. Then cook on the cold side of the grille until medium rare.
